We are pleased to announce the opening of our first restaurant, "荻野屋 Kai - kai", a new business model offering dishes that are an evolution of traditional dashi.
荻野屋 has its origins in a ryokan (Japanese inn) that dates back to the Edo period (1603-1868), and it continues to focus on the taste of dashi, the basic ingredient of Japanese cuisine.
At the new business model "荻野屋 Kai", we are sticking to the traditional dashi broth and newly developed "kaeshi" as a sign of going back to our roots.
